Creamy chiapudding with berry compote

What’s not to love about chiapuddings ? that’s why I’m sharing another chiapudding recipe ?

Because they are so yummy and because they are so satiating!

This recipe is perfect for winter days if you ask me. You can make this pudding the day before, so your breakfast is ready in the morning 🙂

What do you need?

Chiapudding

  • 1 cup of plant-based yoghurt (such as alpro soy yoghurt) (130 g)
  • 1 tsp almond butter
  • 1 tsp vanilla extract/aroma
  • 1 tbsp maple syrup
  • 4 tbsp chia seeds

Berry compote

  • 1 cup of frozen mixed berries (such as blueberries, raspberries, blackberries..)
  • 1 tbsp fresh lime juice
  • 1 tbsp maple syrup
  • 2 tbsp chia seeds
  • Toppings:
    • Fresh berries

Instructions

Mix all the ingredients together in a mixing bowl, make sure the almond butter is soft enough.

Mix it well and place in the frigde for at least 2 hours.

While the chiapudding is in the fridge, make the berry compote.

Place the berries in a saucepan over medium heat. Stir them and add the lime juice and maple syrup.

Remove the pan from the heat and put it in the frigde.

To serve

Put the chiapudding in a nice glace, add the berry compote on top and top it off with nola’s chocolate – no nuts granola and some fresh berries.
