Coconut panna cotta with fruit coulis

What do you need?

Panna cotta

  • 1 can of coconut milk (300ml)
  • 2 tbsp maple syrup
  • 1 tbsp coconut sugar
  • ¾ tsp agar agar
  • 1 tsp vanilla extract
  • 1 tbsp fresh lemon juice

Coulis

  • 1 cup of frozen mango/
    1 cup of frozen raspberries
  • Fresh lemon juice
  • Maple syrup
  • Toppings: fresh passion fruit, red fruit…

Instructions

Place ¾ of the coconut milk in a sauce pan with the maple syrup, coconut sugar, vanilla extract and lemon juice and bring it to a boil. In the meantime boil the other ¼ of the coconut milk with the agar agar. Stir for about 3 minutes. Make sure you read the instructions on the package agar agar before using it.

When the coconut milk is boiling, add the rest of the coconut milk with agar agar.

Stir en boil for another 3 minutes and pour into glasses. Put them in the fridge for at least 6 hours.

While the coconut panna cotta is in the fridge, make your fruit coulis.

Make sure your frozen mango or raspberries are defrosted before putting it in a blender. Blend it together with 1 tsp of lemon juice and 1 tsp of maple syrup (depending on how sweet you want it to be).

Pour your coulis on top of the panna cotta and garnish with fresh fruit.
