Marble banana bread

Not the easiest recipe because of the long ingredient list, but it is worth it! Yummy – fluffy and healthy!

Ingredients banana bread

  • coconut flour 80g
  • rice flour 180g
  • baking powder 2 tsp
  • baking soda 1/2 tsp
  • 2 large overripe bananas
  • coconut milk 120ml
  • maple syrup 80ml
  • vanilla extract 1 tsp
  • melted coconut oil 1 tbsp
  • lime juice 3 tsp

Ingredients chocolate marble:

  • cocoa powder 40g
  • coconut sugar 20g
  • coconut milk 80ml
  • melted coconut oil 1 tbsp

Instructions: Preheat your oven to 190°C.

Mix all the dry ingredients together in a large bowl. Blend the wet ingredients together in a blender (bananas, coconut milk, maple syrup, vanilla extract, melted coconut oil and lime juice).

Mix the wet ingredients together with the dry ingredients until the dough is evenly mixed.

To make the banana bread into a marble one, split the batter into 2 bowls. One bowl with 1/3 of the batter and one bowl wit 2/3 of the batter.

Add the ingredients for the chocolate marble to the 1/3 bowl. So add the cocoa powder, coconut sugar, coconut milk and melted coconut oil.

Now we can start poring the batter into the baking tray. Line the baking tray with baking paper and start with one layer of regular banana bread batter. Put a layer of the chocolate batter on top and so on until there is no batter left.

Bake for 45-55 minutes. Poke a whole in the banana bread with a small knife. If there is no batter sticking to the knife, your banana bread is ready!
